Spinach is a green we are used to seeing as small leaves in the produce aisle, however, the variety I grow is much larger, with a single leaf at times being over a foot long and almost a foot wide. Typically used fresh, cooked or in smoothies.
Spinach is associated with potential cardiovascular protection, antiobesity effects, hypoglycemic activity, anti-inflammatory effects, anticancer properties, neuronal protection, antimacular degeneration, and antioxidant properties.
