Artichoke

Artichokes are the unopened flower bud of a thistle plant, and they have a subtle savory and nutty flavor that goes fantastic with butter. Peel away the small bits of edible flesh at the base of each leaf with your teeth before getting all the way down to the center where the “heart” is. Remove the hair-like fibers covering the heart before consuming. Typically used cooked.

Artichoke is associated with potential antioxidant, coleretic, hepatoprotective, bile enhancing, and lipid lowering properties.
